I have a reprint of the 1904 book, The New York Subway, that was issued to commemorate the opening of the IRT. It has a similar depth chart. It's not so much that the 168 and 181 St. (and 191, which is not on the chart) stations are deep, as that the surface of Manhattan at those points rises high. The tunnel was built at a fairly even alignment to keep it as level as possible all the way through. This meant that some stations would be very far below the surface at those points-- necessitating elevators to exit. (Elevators, interestingly, were a fairly new technology at that time.)
